Creamcheese cupcake

My dear followers,

It has been a while since I wrote a blog post, with no other reason than complete relaxation. I’m enjoying a week of holiday, with no other concerns than family, Christmas, gifts, dinner, friends, New Year’s Eve, finding a new job etc.

So I hope I’m excused… Yesterday however I visited my good friend Karlien for another cupcake baking experiment. For months we’ve been trying to find out what’s in the topping of the delicious cupcakes at Julie’s House in Ghent. And this time we got really close. Yes, close that is.

Since I got these lovely cupcake books for Christmas (thanks again sweet boyfriend 😉 ) we went through all the toppings to figure out which topping could be THE ONE.

So first we tried the Meringue topping, using Karlien’s brand new Kitchen Aid (yes, also a Christmas gift) ! Isn’t it pretty?!

But soon we realized that meringue is just a fancy name for a butter/powder sugar -tasting -white cream. So that did not turn out so well (read: dustbin).

Okay, not letting our spirit down, we tried the next one, which was a cream cheese topping. We followed Mr. Rudolph’s recipe right here:

Now this one got reaaalllly close, the taste was great, now all we’re missing is the texture. Ours was way to fluid compared to the one of Julie’s House. Oh well, we had a great time and we’re getting there. Slowly, but surely. And of course we took some great pictures with my new Nikon (yes, Santa again). After all the ride is what counts, not the destination, right?

      Thx! Julie’s House is the best! It’s good I don’t live in Ghent, I would stop there every day 😉
